Combine marinade ingredients in a bowl, add the chicken and stick in the fridge for at least 20 mins. 3-8 hours is better
Heat 1 tbsp pan lube in a skillet over high heat. Remove chicken from marinade (that is very important), but save the marinade. Place the chicken in the pan with the pan lube (you know the hot one), sear both sides of the chicken, about 1 min per side
Remove chicken from pan and set aside
Heat remaining pan lube in the skillet, add garlic and onion. Cook about 2 minutes
Add the reserved marinade, water, sugar, and pepper. Bring to a simmer then turn heat down to med. Let simmer for about 5 minutes
Add chicken smooth side down. Let simmer, uncovered for about 15 minutes, flip the chick and then let cook for another 5ish minutes
The sauce should be like a thick jam-like-syrup, if not remove the chicken and let sauce simmer until it is.
