Instructions

    1. Prep the chicken. Rinse the chicken thoroughly. Place in a bowl and cover with 1 ¾ cups of buttermilk. Let them soak in the fridge overnight.
    2. Fast forward to the next day - Remove the chicken from the bowl and let sit on a plate for about 30 minutes to take the chill off
    3. While the chicken is warming up, preheat the oven to 360 degrees and mix the breading. 
    4. Put flour, seasoned salt, paprika, pepper, thyme, and cayenne in a very large bowl and stir well
    5. In a small bowl combine milk and the remaining ¼ cup of buttermilk. Pour this into the flour mixture/ With a fork gradually mix until there are little lumps throughout. These lumps will stick to the chicken making it crispier. If needed add a little more flour or milk to make it slightly lumpy
    6. Heat 1 ½ to 2 inches of oil in a skillet, until it is about 365 degrees.
    7. Working in batches (wonder if the pay there is good), thoroughly coat each piece of chicken with the breading. Pressing extra breading onto the chicken if needed. Place the breaded chicken on a plate
    8. Once all is breaded add chicken to the oil 3 -4 pieces at a time. Then cover and cook 5-7 minutes, checking occasionally to make sure it isn’t getting too brown. Turn the chicken and cook another 3-5 minutes
    9. Transfer the cooked chicken to a baking sheet (preferably with a wire rack on it). Don’t worry we know the chicken will not be cooked all the way through.
    10. Once all the chicken is fried. Stick it in the over for 15 minutes.

     

    Waffles

    1. Preheat waffle iron. IN a bowl mix together flour, sugar, baking powder, and salt.
    2. In a separate bowl whisk together milk, vanilla and 2 egg yolk (but save the white, put those in yet another bowl). Pour this mixture over the dry ingredients and gently stir until about halfway mixed together. Add melted butter and chopped jalapenos and finish mixing
    3. In the bowl the eggs whites add 2 more egg whites and whisk until stiff. Then fold this mixture into the waffle batter
    4. Now Cook those waffles until they are all GBD

     

    Sauce

    1. Pour syrup and bourbon into a small pot, bring to a boil. Turn down the heat and let simmer for about 3-4 minutes. Turn off the heat and whisk in 1 tbs of butter at a time and cayenne

     

    Serve

    Place 2 thighs on a waffle and top with sauce ….. easy .
