Heat oil in a skillet over high heat. Once hot add steak bites and season with salt and pepper. (if you want to take this up a notch, add a pinch of crushed red pepper flakes, 1 ts paprika, 1 ts garlic powder)
Cook 2 minutes undisturbed. Stir and cook another 2-3 minutes. Then remove to a plate.
Reduce heat to medium, add butter. Once melted, scrap the bottom of the pan to get all the good bits, add shallots and cook about 1 minute, then add garlic and parsley and cook about another minute.
Remove from heat, add steak back to pan and toss well
