For the Sauce: Whisk together all sauce ingredients. If it is too thick you you, you can whisk in a little water to thin it out
Heat pan lube in a large skillet or wok over med-high heat. Add onions, saute til translucent. Add chicken and saute for about 5 mins longer, til chicken is mostly cooked through. Add mushrooms, carrots, ginger and garlic. Saute for another 5 mins. Stir in chili garlic sauce, hoisin sauce, peanuts, and about 2 tbs of the peanut sauce you made. Cook until chicken is fully cooked
Scoop generous amounts of meat mixture into lettuce boats, drizzle with peanut sauce.
